Scotty McOmelette

So my husband is really the cook of the house. If it was up to me, I would never cook, and just bake :). I look around for recipes, I do all the research to see how to turn favorite recipes into clean. I give him the recipes, and he cooks them. Never argues, always willing to do it. How lucky am I?? 

Sometimes he comes up with recipes on his own, but i do need to check them to make sure he isn't sneaking anything in that we shouldn't be having....lol He likes to be sneaky sometimes. 

One recipe he came up with all on his own was delicious!! And we call it the Scotty McOmelette! 

It is so easy to make, and took him maybe 15 minutes. Which is perfect especially when school starts back up again and we are crunched on time in the morning!

Ingredients

2 large eggs
3/4 cup turkey sausage
1 cup mix of green and red peppers, onions, garlic
1 cup mix of chopped spinach & tomato
1/4 cup of feta cheese (or any cheese you like)

Directions

Sauté in coconut oil, green & red peppers, onions, garlic, and turkey sausage. Scramble two eggs and add in. Place on a plate, top with tomato, spinach, and feta cheese! Oh so good!!
