Slow Cooker Southwestern 2 Bean Chicken

So if you are a busy person, you know important it is to be able to eat quickly, so you can keep going with whatever it is you are doing.

Slow Cookers are like a God sent. You through everything in there, and by the time dinner time arrives POOF - you have dinner.

However, sometimes when you are rushing around - you forget to eat healthy. Well I have made it my mission this fall to make sure I stick to my plan, eating clean and healthy. I wanted to find recipes I can cook up in the slow cooker - and just grab and go for the week.

While looking around, I stumbled across this recipe from the Gracious Pantry and as always, made it my own.


What you will need:

1 pound of Chicken Breast, raw, boneless
1 can (15oz) Chick Peas
1 can (15oz) Black Beans
1 can (28oz) Organic Crushed Tomato
1 lb Organic Corn
1 jar (12oz) of your favorite salsa (I used salsa verde)


Directions:

Place the chicken in the bottom of the slow cooker, pour the salsa and tomatoes on top. Then layer
the beans, chick peas, and corn. Cook on low for about 7 hours. I cooked it on low for 3 hours then on high for 2 - I was hungry!





Make sure you use the correct portions for your calorie intake. If you are following the 21 Day Fix this would be 1 red container filled - counting as 1 red and 1 yellow.

This makes a lot! I could probably have this for lunch and dinner everyday for 2 weeks!
