Cheesy Cauliflower Breadsticks, Cauliflower Pizza....whatever you want to call it this is an amazingly delicious gluten free, low carb, recipe! This recipe is a winner and a keeper!

For so long i have seen recipes, and I always say I am going to try it an never do. Finally about a week or so ago I decided this is doing it. I was so pleasantly surprised how fast and easy it was to prepare and make. I decided to not to anyone in my family what I was doing, because the minute you mention something is healthy - no one want to eat it!! So i decided to play a trick on everyone and just tell them it was home made pizza....HAHA Yes I am devious like that. 

So here you go....Kid & Niece tested and APPROVED!!! 

4 cups of riced cauliflower (about 1 large head of cauliflower)
4 eggs
2 cups of mozzarella cheese (I used a mix of Tex Mex & Mozzarella blend because that's all I had)
3 tsp oregano
4 cloves garlic, minced
salt and pepper to taste
1 to 2 cups mozzarella cheese (for topping)

  1. Preheat oven to 425 F degrees. Prepare 2 pizza dishes or a large baking sheet with parchment
  2. Make sure your cauliflower is chopped in small florets. Add the florets to your food processor or Ninja and pulse until cauliflower resembles rice. 
  3. Place the cauliflower in a microwavable container and cover with lid. Microwave for 10 minutes. Place the microwaved cauliflower in a large bowl and add the 4 eggs, 2 cups of mozzarella,oregano, garlic and salt and pepper. Mix everything together.
  4. Separate the mixture in half and place each half onto the prepared baking sheets and shape into either a pizza crust, or a rectangular shape for the breadsticks. I had a big enough sheet so I thru the whole thing in one and made a giant pizza.
  5. Bake the crust (no topping yet) for about 30-35 min or until its golden. Don't be afraid the crust is not soggy at all. Once golden, sprinkle with remaining mozzarella cheese and put back in the oven for another 5 minutes or until cheese has melted.
  6. Slice and serve.

If you do not have a microwave, I’d recommend cooking the cauliflower first either in your oven or on the stovetop and then ricing it. Easiest would be to steam it and then ricing it.

I added the sauce at the last point - to try and avoid sogginess - or put sauce on the side for dipping 

Following the 21 Day Fix??? Block off a single serving portion before baking and adding cheese. Make sure its about a Cup of the Cauliflower mixture (1 Green) and 1 blue container of cheese on top
