Cauliflower Fried Rice



Cauliflower Fried Rice

This has to be one of the easiest items to make! It's Whole30, Paleo, Gluten, and Dairy Free friendly! Its delicious and can be a side dish to literally anything. Throw chicken, steak, or pork in it and you can create an entire meal!!

You are going to have to take about 10 minutes to cut up all your veggies, but it is so worth it in the end! I also like to take the easy route and just grab of cauliflower rice from Trader Joe's! 






Ingredients: 

1 bag of cauliflower rice or 1 full head of cauliflower diced up
As many veggies as you desire! 
I used:
handful of peppers
handful of onions
handful of carrots
handful of celery
handful of broccoli
coconut oil
2 cage free eggs
1 tsp cayenne pepper
1 tsp cumin
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp chili powder


Directions:

In a large pan, cook all the veggies in the coconut oil. Add all the spices. Cook and stir for about 5-7 minutes. Once tender add in the cauliflower. Keep stirring and cooking over medium heat about 5 minutes. In a separate bowl, scrambled the eggs. Push the veggies and cauliflower off to the side of the pan, and add in the eggs. Cook a little then stir everything together and cook until well cooked. Take off the heat and serve!!
