Whole 30 Approved - Slow Cooker Steak Fajitas w/ Cauliflower Rice



I dont know about you - but I LOVE anything with the word fajita in it!!! This easy and delicious crockpot dish is perfect any day of the week!

Best part of this recipe - its only 5 ingredients!!! I found some recipes online, and of course had to switch things up to make it my own. I'm getting pretty good at this cooking thing!!

When i was going over the original recipe, it called for packet seasoning. I didnt want to go that route - since when I made this i was following the Whole30 plan. I wanted to make sure what I was eating was as clean as possible. Im glad i dug a little deeper and found a recipe that i could add my own flare to! I made a whole bunch so I could add it to any other dish I decided to create.

STEAK FAJITA

Ingredients:

2 lbs grass fed beef, sliced
2-3 peppers, (a mix of red, yellow, orange, green - i like mine chopped up)
20 oz salsa (I used Trader Joe's Salsa Autentica as there is no added sugar)
1 onion chopped (red or yellow)
2 tbsp fajita seasoning
Directions:

Put salsa in the bottom of the crock pot. Place all ingredients on top. Mix around. Cook on High for 6-8 hours
