Whole 30 Approved - Spaghetti Squash Low Mein

If you know me, I love to eat!!! I love to find new recipes, make them my own, and test them out! I wasnt so sure of this one, but i decided to take a chance - and i am so glad i did!! And i made so much, that I can share it with my friends and still have enough for a side dish for each mal for the next week!

Spaghetti Squash is a staple in my house. It easy to make, goes perfectly with most meals, and it can be the center of a main meal! I have been staying away from pasta for a long time now, which is crazy i know since I'm Italian and pasta was at almost every meal!! But lets be honest, I am not raining for any marathons so i do not need all those carbs, pasta it fills you up with too much starch, carbs, and empty promises. Eating too much of any carb will raise your blood glucose. I would much rather find my carbs in other foods like sweet potatoes!!

First things first. You have to make the spaghetti squash! Click here for a simple recipe.

Now that we have the spaghetti squash done - let's move on.

Ingredients:

1 large spaghetti squash
1/4 cup coconut aminos (if not following Whole30, Bragg Liquid Aminos)
3 cloves garlic, minced
1 tablespoon coconut sugar
2 teaspoons freshly grated ginger
1 teaspoon white or black pepper
2 tablespoons olive oil
1 onion, diced
3 stalks celery, disced
2-3 cups broccoli slaw mix (or you can use cole slaw mix)
Optional (but I did use - cause i like a little kick)
1/2 tsp cumin
1/2 tsp chili powder
1/2 paprika
1/2 cup peppers


Directions:

In a small bowl, add coconut aminos, garlic, coconut sugar, ginger, white or black pepper (optional ingredients - except peppers), mix all together and set aside.

Heat olive oil in a large skillet over medium high heat. Add onion, celery, and peppers, and cook. Stir a lot, make sure everything is tender and slightly see through. About 3-4 minutes. Stir in the slaw mix and cook until heated through, about 1-2 minutes.



Into the skillet, stir in the spaghetti squash and pour the sauce mixture over it until well combined, about 3-5 minutes. If you would rather, pour the sauce mixture over the spaghetti squash and mix before adding to the skillet - which is what i did :) 




Serve immediately. Serve as a side dish, or throw some steak or chicken on top and make it a meal!
